Using the image-upload-icon gives a popup for uploading image and entering attributes for Alternative text (alt=), Caption and Tags.

After publishing you should be able to edit and change these values at a later time including replacing the image file itself.
If you in edit-mode select the image and click on it's properties these are not available. Only image-variations, alignment, offset, limit etc. can be changed from the image-properties.
