Don't ship default .env file

      Description

      When creating a new ez platform project it would be great if there's no default .env file. IMHO this should be renamed to .env-dist and maybe moved into doc/ with the rest of the docker setup. Shipping a default .env makes it hard to debug your own docker/docker-compose as the default .env points to Dockerfiles in doc/. Not to mention that .env is usually local and should not be committed to git.
