Not possible to set session handler via docker

      Description

      It seems like since this change it is not possible to override session handler via docker config

      The change in default_parameters.yml is due to this symfony change in 3.x

      This means that we should use environment variables in order to inject session handler when using docker ( which is similar to what we do with Platform.sh)
