Was: No way to retrieve the country list in the REST v2 API

In the current REST API, there's no way to retrieve the list of countries used in the Country Field type.
For the Editorial Interface, that's a big issue because the UI is supposed to show the complete list where the user can pick one or several countries.

One possible solution would be to embed this list in the field description of the Country fields like it is done for the Selection fields.
